Cupcakes are not just for kids anymore. They are also served at dinners, picnics, buffets and even weddings.

This cupcake batter can also be used for standard sized cakes. It is easy to make, and delicious to taste. Don’t over beat your batter because this can cause them to become more chewy, then moist. The frosting is easy to prepare and can also be used for standard size cakes. You can choose decorations or the food color of your choice, if you desire. But even plain they are sure to be a hit.

Cooking time: 25 minutes
Preparation time: 10 minutes
Serves: 12 large cupcakes

Ingredients

  • 2 cups cake flour, sifted
  • 1 1/3 cups sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 stick of butter, softened
  • 2 teaspoons vanilla
  • 2 eggs

Method

1. Preheat oven at 350 degrees

2. Line cupcake pan with paper cups.

3. Combine Flour, sugar, baking powder, and salt, and mix well.

4. Beat in butter, vanilla, and eggs.

5. Fill cups, and bake for 20-25 minutes, or until toothpick inserted in the middle comes out clean.

Vanilla Frosting

Ingredients

  • 4 cups powdered sugar
  • 1 cup shortening
  • 2 tablespoons water
  • 1 teaspoon vanilla

Method

1. Combine sugar, shortening, water, and vanilla.

2. Beat at low speed just to mix.

3. Beat at medium speed for 5 more minutes.

4. Frost cupcakes and add any decorations you choose.
